The Best Lemon Blueberry Muffins

This week started with a huge desire for lemon blueberry muffins. I always spend more time than I should researching recipes. I wonder if everyone is like that! (Let me know in the comments how much time you spend researching recipes, or if you just have a bunch of go-to recipes that you always use!) Anyway, I spent a few hours yesterday looking for the perfect recipe. For me, the perfect recipe has weight measurements. Sometimes this can be painfully hard to find. I follow a few baking blogs that I get the majority of my recipes from, but I do enjoy variety, so I head to google. Yesterday I found a “new-to-me” blog called “Chelsweets“.

I was super thrilled to find that Chelsey, of Chelsweets, uses weights in her recipes! Hers was the fourth or fifth recipe for blueberry lemon muffins that I came across, but it impressed me. Her recipe uses yogurt, fresh lemon juice and zest as well as buttermilk. I also knew it was likely to be a good recipe because she uses initial high temperature for baking. I learned about this technique from one of my favorite food bloggers, but I will talk about that in another post.

This was the first time that I used fresh lemon in my baking (shocking, right?). I purchased lemons just a few days before for the purpose of these muffins. I hardly ever have fresh lemons on hand. The recipe was really easy to follow with clear directions, so I was able to make them quickly. I used frozen blueberries instead of fresh and I made my own buttermilk, otherwise I followed the recipe as written.

I don’t use muffin liners unless I really have to, and these muffins had no issue releasing from the pan after the ten minute resting period. After the muffins cooled off completely it was tasting time! I have to say that these are the best lemon blueberry muffins that I have ever tasted! They are perfectly moist and full of flavour thanks to the buttermilk and yogurt. My muffins didn’t rise as high as I had hoped but I think it was because I didn’t use real buttermilk. I will have to buy some and re-make the recipe. In the mean-time, why don’t you head on over to Chelsweets and try out the recipe for yourself!
